Wines for Turkey
"Turkey is relatively bland, without strong flavors of its own, so there are a wide variety of wines that complement it. Because the bird tastes so mild, there aren't too many wines that clash with it, but it's also dense and very chewy. The most delicious matches are wines that have flavors similar to the traditional accompaniments and dressings, such as cranberry sauce. Beaujolais, which is a light fruity red from southern Burgundy in France, has savory berry flavors that approximate the effect of a cranberry sauce. Other side dishes that go well with turkey have spicy flavors. The white wine that comes to mind is the aromatic Gewurztraminer, whiche is produced in the Alsace region of France, in California and Washington State. Another white grape variety whose fruit flavors work with turkey is Riesling from Germany or the Pacific Northwest. Its floral aromas and slightly sweet, honeyed flavors are reminiscent of yams. The other wines that work well are fuller-bodied: oak aged Chardonnays with ripe honey and smokey flavors, such as wines from the Central Coast of California, and spicy berry-flavored Red Zinfandel." -Sandy Block, Master of Wine.
